Bellinzona had recently launched a new menu featuring a Classic Italian cuisine that truly reflects its roots. The menu includes simple dishes such as Fettuccini Marinara, Pasta Primavera and even the most staple of dishes Spaghetti Bolognese. What makes the difference is that the pasta in these dishes is made using freshly hand made pasta – just as pasta should be.
Chef Ross is the creator to this new menu. He has recently moved from Queensland to our region. He now heads the kitchen for the Heritage Restaurant at Bellinzona. His background is in Italian and French cuisine and has worked at various international resorts. When asked to review our menu, he felt that we should go back to our heritage.
With such a rich Swiss Italian legacy and the first owners of Bellinzona in the 1800s, hailing from the city of Bellinzona in the region of canton Ticino, located at the foot of the Alps and strongly influenced by Italian culture and cuisine, Ross believes some of these classic dishes would have been served daily at the guesthouse in those days. Hence a Classic Italian menu couldn’t have been more befitting for the restaurant.
In Italian cuisine, it is also about using fresh produce to bring the best of its flavours out. Being in a region where there are so many amazing growers and producers, Ross is excited in exploring the use of more local produce in his classic dishes.
The Heritage restaurant sits in the heart of Bellinzona; it features beautiful Edwardian décor and gorgeous views of the Wombat State Forest.
